Gluten Free Flour vs All Purpose Flour
Gluten free flours are finer than all purpose flour and absorb more liquid than regular flour.
Some gluten free flours have more nutrients than others, making them healthier choices to include in your diet.
King Arthur GF Flour
- King Arthur Measure for Measure Flour is gluten-free but also 1:1 substitute for wheat flour; an essential gluten-free pantry staple for bakers

What do I use this flour for?
This is my go-to all purpose flour replacement – whether I’m using it to bread chicken, for baking, or for coating the counter top when I’m baking!
I’ve tried countless other gluten free flours and it can honestly be difficult to bake with them sometimes. If you’re gluten free, you know that a lot of gluten free foods can crumble and fall apart without the protein that helps food maintain their shape.
This flour is ideal for cookies, cakes, muffins, quick breads, pancakes, waffles, brownies, scones, pie crust, and other non-yeasted recipes.
Different gluten-free flours are designed for specific recipes. This specific one is a “replacement” flour. [It’s used in place of all-purpose flour in many traditional recipes.]
GF all purpose flour is meant for recipes that include xanthan gum and call for “gluten-free flour blend,” or something that sounds similar to that.
