Who doesn’t love carrot cake? This dessert is the perfect option for Easter or Mother’s Day Brunch! It’s gluten free, dairy free, and not to mention delicious! It’s a quick and easy cake to make because all of these ingredients just get whipped up in your blender. A carrot cake is a cake that contains carrots mixed into the batter. Most modern carrot cake recipes have a white cream cheese frosting. This recipe does have both of those, but traditional carrot cake is made with flour. And although we could make a gluten free carrot cake using gluten free flour, we’re doing something a little different.
This healthy oatmeal carrot cake has oatmeal, carrots, raisins, naturally sweetened with a vanilla infused maple syrup and topped with a delicious cream cheese frosting. Plus it’s super easy to whip up in your blender.
It’s a “healthier” twist on a traditional, classic dessert!
I also love that you can use this batter however you want. If you want them to be mini, you can pour them into muffin tins to make gluten free carrot cake muffins!
What Frosting Goes Best With Carrot Cake?
There are many types of frosting that go well with carrot cake, such as cream cheese frosting, lemon frosting, or even a simple glaze. It really depends on your personal preference and what type of flavor you want to complement the carrot cake.

We’re using cream cheese frosting, and to keep this recipe simple, I’m using the gluten free Pillsbury Cream Cheese Frosting! I know some people prefer homemade cream cheese frosting, but honestly, I just love this Pillsbury frosting. It’s easy and so delicious!
Gluten Free Oatmeal Carrot Cake
Ingredients
- 4 Cups Gluten Free Oatmeal [divided]
- 1 1/2 Tsp Cinnamon
- 1 1/2 Tsp Baking Soda
- 1/2 Tsp Salt
- 3/4 Cup Orange Juice [I use pulp free Simply Orange Juice]
- 3/4 Cup Vanilla Infused Maple Syrup [You can also use regular maple syrup if you prefer]
- 3/4 Cup Apple Sauce
- 2 Eggs
- 3 Tbsp Olive Oil
- 2 Tsp GF Vanilla Extract
- 1 1/2 Cup Shredded Carrots
- 3/4 Cup Raisins
- 1 Package Pillsbury Gluten Free Cream Cheese Frosting
Instructions
- Preheat the oven to the 350º and spray your two 8" inch pans with cooking spray and set aside
- Add 2 1/2 cups of the GF oatmeal, as well as the cinnamon, baking soda, salt, orange juice, maple syrup, apple sauce, eggs, oil, and vanilla extract into your blender and blend until it's smooth1 1/2 Tsp Cinnamon, 1 1/2 Tsp Baking Soda, 1/2 Tsp Salt, 3/4 Cup Orange Juice, 3/4 Cup Vanilla Infused Maple Syrup, 3/4 Cup Apple Sauce, 2 Eggs, 3 Tbsp Olive Oil, 2 Tsp GF Vanilla Extract
- Once batter is combined, fold in remaining 1 1/2 cup of oatmeal, carrots, and raisins1 1/2 Cup Shredded Carrots, 3/4 Cup Raisins
- Pour batter evenly into pans and bake for 25-30 minutes until brown on top and toothpick comes out clean
- Allow the cake to cool
- Once the cake is completely cooled, remove from pan and frost the first layer with your preferred choice of frosting, then pile the second half of the cake on top for the second layer and frost that one!1 Package Pillsbury Gluten Free Cream Cheese Frosting

Where Can I Find Vanilla Bean Infused Maple Syrup?
You can definitely use regular maple syrup for this recipe, since we are adding gluten free vanilla extract as well. But if I have the vanilla infused maple syrup on hand I like to use it for added flavor. I found mine at Target, and I know Trader Joe’s has it sometimes too. But here are a couple that are available on Amazon.
