Being gluten free doesn’t mean we have to miss out on one of the best dishes ever! This creamy chicken penne pasta recipe is a quick and easy dish. The bruschetta topping really adds to the whole meal, so I would definitely suggest you don’t skip it!
Bruschetta Topping
The ingredients are simple: tomatoes, basil, olive oil, balsamic vinegar, garlic, salt and pepper. Mix them all together and you are good to go! I like to make the bruschetta topping first and set it aside to the give the flavors time to blend together!
Gluten Free Pasta
I almost exclusively use bionaturae gluten free pasta, I just think it cooks the best, doesn’t fall apart, and tastes good. You can usually find it in your local grocery store or a whole foods. Amazon also sells it but it’s usually in bulk – but we use it!
I like to use penne for this recipe, but spaghetti or fusilli would also be really good!
