Looking for an alternative to the classic chocolate chip cookie? This is the way to go, these gluten free congo bars are baked in an 8×8 pan and using Betty Crocker’s Gluten Free Chocolate Chip Cookie Mix.
Ingredients
- Box of Gluten Free Chocolate Chip Cookie Mix
- Oatmeal
- Walnuts
- Coconut
I also like to use this same exact recipe but instead of making congo bars, I will make cookies. It’s the same exact recipe only instead of spreading it into an 8×8 pan you just but little balls of the dough onto a cookie sheet and bake for about 20 minutes. This recipe makes a TON of cookies if you decide to do it this way!
Gluten Free Cookie Bars [Congo Bars]
Equipment
- 1 8×8 pan
Ingredients
- 1 Box Betty Crocker's Chocolate Chip Cookie Mix [1 stick butter, 1 tablespoon water, 1 teaspoon gluten free vanilla, and 1 egg]
- 3/4 Cup Coconut
- 1/2 Cup Gluten Free Oatmeal
- 1/2 Cup Walnuts
Instructions
- Preheat the oven to 350º
- Soften 1 stick of butter [if it's not already soft, I put it in a large glass microwave safe bowl and microwave it for about 30-40 seconds until it begins to soften/melt] – I use the same bowl I'm going to mix everything in
- Once the butter is soft, add in the gluten free oatmeal in with the butter and mix it all together, I add the oatmeal now because I just find the oatmeal tastes better this way1/2 Cup Gluten Free Oatmeal
- Now add in 1 tablespoon of water, 1 teaspoon of gluten free vanilla, and 1 egg
- Mix that all together
- Now pour in the box of dry chocolate chip cookie mix and mix it all together
- Add in the coconut and walnuts3/4 Cup Coconut, 1/2 Cup Walnuts
- Once this is all mixed together, spray your 8×8 pan and spread the mixture evenly in the pan
- Bake in the oven for about 40 minutes
- Once they've cooled, I cut them into little squares like how you would serve brownies.

Exact Ingredients I use
I usually can find this gluten free cookie mix in the normal baking aisle at your local grocery store! Sometimes it’s a little pricer on amazon, to be perfectly honest.
I buy this gluten free oatmeal at my local grocery store too, where the regular oatmeal is. I can only find it being sold in bulk on amazon, but I posted it anyway so you can see what the packaging looks like! Or maybe you want to buy a 4 pack! Who knows!?
You can use whatever type of coconut is your favorite, but this is my personal go-to!
You can use whatever type of 8×8 pan you prefer to use, but I like to use the glass pyrex baking dish because it has a lid! It makes it extremely convenient if you’re bringing them somewhere or just to keep them fresh longer.
But I also use just a regular 8×8 pan a lot of the time and cover them up with tin foil overnight. They don’t last too long in our house anyway – they’re too delicious!
This is one of those recipes I make that is always requested! Anytime I’m going to anything this is one of the desserts my friends and family want me to bring – along with my Dangerously Delicious Dessert- Gluten Free Chocolate Trifle!
