Gluten Free Sweet Potato Noodles
When I first tried sweet potato noodles at Fresh Kitchen, I immediately thought I had to have that recipe. While it’s nearly impossible to figure out exactly how they make their sauce, I figured out a bunch of other ways these noodles taste just as delicious!
If you’ve never had sweet potato noodles, they’re sometimes called Glass Noodles. They’re chewy noodles that is made only from sweet potatoes and water. They’re a healthy alternative to ramen, rice and pasta & perfect for soup and stew. Sweet Potato Noodles are kind of like tofu how they absorb the flavor of any sauce or broth.
Sweet Potato Noodle Benefits
These noodles are sodium free, sugar free, gluten free, vegan, pesticide free, and chemical fertilizer free!
Sweet potato noodles contain high amounts of vitamins, antioxidants, and fiber.
One serving of sweet potato noodles provides 475 percent of the daily value for vitamin A. One serving also provides one-third of the DV for vitamin C, an antioxidant vitamin necessary for the synthesis of collagen, which makes up connective tissue and is necessary for proper wound healing.
Collagen’s main role is to provide structure, strength and support throughout your body. Collagen’s specific roles include: Helping fibroblasts to form in your dermis [middle skin layer], which helps new cells grow. Playing a role in replacing dead skin cells. [Basically, keeps us looking young and beautiful!]
How To Make Sweet Potato Noodles
We’ve always cooked our noodles the same way you cook pasta – boil your water and then boil the noodles for 6 minutes. It’s always worked perfectly fine and they taste delicious!

Where Buy Gluten Free Sweet Potato Noodles
I have always gotten mine on amazon. I haven’t been able to find them in a grocery store. Amazon sells these as a box, so you get a package of 4, 10, or 12. I always get the package of 12 because I cook these so regularly.
Sweet Potato Noodle Recipes
I mainly use these when I cook pasta salad. Which is the easiest recipe ever! Once you’ve boiled the noodles for 6 minutes and have drained them – put the noodles back into a pan. Then, using your favorite italian dressing [I use Ken’s Lite Italian] pour some over the noodles – we just eyeball it. Then, using the spice Salad Supreme – shake a bunch of that all over the top of the pasta and mix!
