We’ve all been there, short on time but still want to make a delicious dessert for a family get-together. Easter can be a very busy day, with lots of food and desserts to make. So these quick and easy gluten free rice krispie treats are my go-to for a family gathering that are always a fan favorite!

Gluten is a protein, found in many grains, including, wheat, barley, and rye. It’s common in foods such as bread, pasta, pizza, and even -cereal!
Are Rice Krispies gluten-free?
Kellogg’s Rice Krispies have malt listed as an ingredient, which comes from barley (a gluten containing grain). This means Kellogg’s Rice Krispies are NOT gluten friendly!
My mom’s rice krispie treats were always one of my favorite recipes so when I couldn’t eat gluten anymore I was so sad I wouldn’t be able to eat them.
We were determined to find the best gluten friendly cereal replacements for rice krispies and cocoa puffs [yes, cocoa puffs -it’s our secret ingredient]! And after lots of different recipe combos and using different products, I think we’ve finally nailed it.
They’re perfection and so good you can’t even tell they’re gluten free! With just 6 ingredients, you too, can make this delicious no-bake treat when you’re short on time!
Gluten Free Rice Krispie Treats
Equipment
- 13 x 9 x 2 pan
- parchment paper
- 1 rubber spatula
- cooking spray
Ingredients
- 1 stick of salted butter
- 2 bags of marshmallows [20 oz total]
- 1 tsp gluten free vanilla extract
- 10 oz Crispy Rice Cereal typical box is 12 oz
- 2 cups Choco Chimps Cereal
- 5 oz Ghirardelli Dark Chocolate Melting Wafers the bag is 10 oz, I use about half the bag
Instructions
- Line your 13 x 9 x 2 inch pan with parchment paper, lightly spray parchment paper with cooking spray
- In a large glass bowl, melt stick of salted butter in microwave for 30-60 seconds [depending on the strength of your microwave]
- add one bag of marshmallows to melted butter and heat up in the microwave for 1 minute [make sure to press marshmallows down as they will rise]
- TIP- spray rubber spatula with a little bit of cooking spray before you start to stir melting marshmallows, it gets very sticky and this will keep it from sticking to your spatula
- Remove from microwave and stir, then add your second bag of marshmallows, place back in microwave for another minute
- remove from microwave and stir
- add 1 tsp of vanilla extract to the mixture
- add 12 oz. box [less 2 cups] of crispy rice cereal a little bit at a time, stirring as you go
- add 2 cups of choco chimps [these taste exactly like cocoa puffs, this is my favorite part of this recipe]
- once everything is completely mixed together, spread in your pan, and flatten with the back of a metal spoon [I also spray my spoon with a little cooking spray to prevent sticking]
- pour half the bag of chocolate melting wafers into a small glass bowl and follow microwave instructions
- once the chocolate is melted, drizzle all over the top of your rice krispie treats
- refrigerate for 15 minutes
- Enjoy!

Recipe FAQ’s
Are marshmallows gluten-free?
Most, if not all, marshmallows are gluten-free. I usually use Kraft jet-puffed marshmallows, although the package doesn’t label them as gluten free, the ingredients list do not list anything that contains gluten. Kraft also reports that there is no risk of cross contamination in the manufacturing process.
How long will these Gluten Free Rice Krispie Treats last?
You can store your gluten-free rice krispie treats in an airtight container at room temperature for 2-3 days. Personally, I like to keep mine refrigerated in a tupperware and eat them cold and I find they last about 5-7 days. For longer storage, you can keep your treats in the freezer. I’d recommend placing wax paper in between each one so they don’t stick together. Let thaw at room temperature for an hour before serving.
Can this recipe be made dairy free?
Yes, you can just use dairy free butter in this recipe. Marshmallows are completely dairy-free. They’re made up of basically just sugar, water and gelatin.
