These buffalo chicken stuffed peppers are such an easy low carb dinner. They’re gluten free, creamy, and a little spicy [or extra spicy if you like it that way]. They don’t take much effort to make which is why I love making it for dinner so much!
- Bell Peppers: The most important ingredient in this recipe is obviously the peppers! Feel free to use whichever colors you’d like. I switch it up between red and green
- Shredded Chicken: Buffalo Chicken Stuffed Peppers call for 2 cups of cooked shredded chicken. I would suggest using store bought rotisserie chicken, it’s so good and is such a timesaver.
- Ranch – I add 1/2 cup of Ken’s ranch dressing, I don’t like my food very spicy!
- Plain Greek Yogurt: Plain greek yogurt is used here to make the pepper stuffing as creamy as can be! It’s a similar taste to sour cream, but it’s a healthier alternative. You’ll need 1/2 cup!
- Cream Cheese: You’ll also need cream cheese! I love cream cheese so much. You’ll want to use 4 oz.
- Cheddar Cheese: 3/4 cup of cheddar cheese for the top
- Hot Sauce: You will need 1/3 cup buffalo sauce to make these peppers. I always use Primal Kitchen Buffalo Sauce.
- Minced Garlic: 1/2 tsp Minced Garlic [some people use garlic powder, that’s not always 100% gluten free and my stomach gets affected by it]
- Salt: a little salt to taste!
GF Buffalo Chicken Stuffed Peppers
Ingredients
- 3 Bell Peppers
- 2 Cups Shredded Chicken [I buy a cooked rotisserie chicken from the store and shred it]
- 1/2 Cup Ken's Ranch Dressing
- 1/2 Cup Plain Greek Yogurt
- 4 Oz. Cream Cheese
- 3/4 Cup Shredded Cheddar Cheese
- 1/3 Cup Primal Kitchen Buffalo Sauce
- 1/2 Tsp Minced Garlic
- Salt to taste
Instructions
- Set the oven to 350º
- Cut the peppers the long way and remove the seeds. Place in a baking dish or on a sheet pan, spray with olive oil, and bake for 15 minutes. [I put down parchment paper and lightly spray that with cooking spray for easier clean up.]3 Bell Peppers
- While the pepper are cooking start the buffalo chicken mixture. Combine the shredded chicken, ranch, greek yogurt, cream cheese, buffalo sauce, minced garlic, and salt.2 Cups Shredded Chicken, 1/2 Cup Plain Greek Yogurt, 4 Oz. Cream Cheese, 1/3 Cup Primal Kitchen Buffalo Sauce, 1/2 Tsp Minced Garlic, Salt to taste, 1/2 Cup Ken's Ranch Dressing
- Then using a cheese grater, shred the Cheddar Cheese.3/4 Cup Shredded Cheddar Cheese
- Remove the peppers from the oven and fill with the chicken mixture.
- Top the peppers with the shredded cheddar cheese.
- Bake for 20 minutes
- Enjoy!
Tips For Recipe
You can also buy shredded cheddar cheese, you don’t have to shred it yourself if you’re trying to save time.
I use red and green peppers. You can use whatever color you prefer!
To cut the peppers – I recommend cutting around the stem, pulling it out along with the seeds, and then banging the pepper with the opening face down to remove any leftover seeds. Then cut the pepper in half longways.
You can serve these peppers with added hot sauce, ranch, or blue cheese to drizzle on top.
For side dishes, you can make a pasta salad, rice, tortilla chips, coleslaw, or you can just serve them alone, there’s plenty of flavor, and very filling in my opinion!
You can use whichever GF hot sauce you like best. I have used Frank’s Hot Sauce plenty of times and never had an issue, they say it doesn’t use any gluten containing ingredients. I’m linking a website here that has a list of other gluten free hot sauce options.
You can store this recipe in an airtight container in the refrigerator. The peppers will last up to one week!
