Today I’m going to be sharing with you one of my favorite desserts! This recipe for gluten free coconut macaroons will be your new go-to!

Dessert season is upon us! And this recipe for gluten free coconut macaroons is not only easy but seriously delicious! So keep reading to find out how you can also make these little bites of chocolate and coconut heaven!

Is there any better combo than chocolate and coconut? I really don’t think there is. These macaroons are soft and chewy on the inside and crispy and golden on the outside! They’re honestly perfect and kind of addictive.
What You’ll Need
- 1 Bag of sweetened shredded coconut – I use Baker’s
- Gluten free vanilla extract
- Mini chocolate chips
- 14 oz of gluten free sweetened condensed milk [1 can] – use ALMOST the whole can
- Melting chocolate – I like to use Ghirardelli dark chocolate*
- Parchment paper + 2 cookie sheets
*If you’re going to be making these are the holidays, I suggest buying this chocolate ahead of time. These melting wafers sell out quick close to Christmas and it makes it very frustrating to find it when you’re trying to make something specific!
The key ingredient in this recipe is sweetened condensed milk, a canned milk product from which water has been removed and sugar has been added. It’s sticky and sweet and makes these macaroons perfect! Many recipes call for it but if you use too much it becomes too liquid-y and the edges of the macaroons will burn in the oven. So, for this recipe you’ll use just shy of one can.
You can also add other things like peanut butter chips or raspberries.

Macaron vs Macaroon
I think this is something that can easily get mixed up if you don’t know what the difference is. Macarons and Macaroons may seem similar in pronunciation and spelling, but they are completely different treats.
What’s a macaron? A macaron is meringue based. They’re a French sandwich cookie made with almond flour, usually made in a variety of colors and flavors. They’re usually filled with jam, ganache, or buttercream.
What’s a macaroon? A macaroon [this recipe] is coconut based, usually shaped in little mounds and have a chewy texture.
Chocolate Coconut Macaroons
Equipment
- parchment paper
- 2 Cookie Sheets
Ingredients
- 1 Bag Shredded Coconut [I use Baker's sweetened coconut]
- 1 Tsp Gluten Free Vanilla Extract
- 1/8 Cup Mini Chocolate Chips
- 14 Oz Gluten Free Sweetened Condensed Milk [use ALMOST the whole can]
- 1 Bag Ghirardelli Dark Chocolate Melting Wafers
Instructions
- Preheat the oven to 325º
- Mix all the ingredients in a large bowl until well combined.*remember don't use the entire can of condensed milk*1 Bag Shredded Coconut, 1 Tsp Gluten Free Vanilla Extract, 1/8 Cup Mini Chocolate Chips, 14 Oz Gluten Free Sweetened Condensed Milk
- Lay the parchment paper on the cookie sheet
- Roll the mixture into little 1-2 inch balls depending on how big you want them [this is where it can get messy]
- Bake in the oven for 15-20 minutes or until golden brown
- Remove them from the oven and let them cool
- Now melt your chocolate. You can either use the microwave or use a double boiler – just follow the instructions on the back. I just microwave my chocolate in a glass bowl.1 Bag Ghirardelli Dark Chocolate Melting Wafers
- Dip the bottoms of the macaroons in the chocolate and then place them back on the parchment paper, upside down.
- Throw in the refrigerator for about 5-10 minutes for the chocolate to set.
- That's it – enjoy!
