Chocolate Coconut Macaroons

With just 5 ingredients, these macaroons are gluten free, chewy, and delicious - not to mention dipped in chocolate!

Equipment

  • parchment paper
  • 2 Cookie Sheets

Ingredients
  

  • 1 Bag Shredded Coconut [I use Baker's sweetened coconut]
  • 1 Tsp Gluten Free Vanilla Extract
  • 1/8 Cup Mini Chocolate Chips
  • 14 Oz Gluten Free Sweetened Condensed Milk [use ALMOST the whole can]
  • 1 Bag Ghirardelli Dark Chocolate Melting Wafers

Instructions
 

  • Preheat the oven to 325ยบ
  • Mix all the ingredients in a large bowl until well combined.
    *remember don't use the entire can of condensed milk*
    1 Bag Shredded Coconut, 1 Tsp Gluten Free Vanilla Extract, 1/8 Cup Mini Chocolate Chips, 14 Oz Gluten Free Sweetened Condensed Milk

  • Lay the parchment paper on the cookie sheet
  • Roll the mixture into little 1-2 inch balls depending on how big you want them [this is where it can get messy]
  • Bake in the oven for 15-20 minutes or until golden brown
  • Remove them from the oven and let them cool

  • Now melt your chocolate. You can either use the microwave or use a double boiler - just follow the instructions on the back.
    I just microwave my chocolate in a glass bowl.

  • Dip the bottoms of the macaroons in the chocolate and then place them back on the parchment paper, upside down.

  • Throw in the refrigerator for about 5-10 minutes for the chocolate to set.
  • That's it - enjoy!

Notes

*1/8 cup of chocolate chips is going to seem like not enough, but remember they're going to be dipped in chocolate so you don't want to add too many!
