So, I originally got inspired to make this recipe when I was watching the Food Network. Ina Garten was making her Herbed Orzo with Feta. I thought it looked so good!
But, orzo is a small, short-cut pasta, that’s often made from semolina flour, which comes from durum wheat – so it’s not gluten free.
I knew right away I wanted to make it with one of my favorite gluten free bowtie pastas. I love this pasta, there’s just something about bowtie pasta that makes a pasta salad taste so much better! Another good thing is this pasta cooks in just 8 minutes, which makes it quick and easy!
[I just found out Jovial also makes a gluten free orzo, I have never tried it before.]
The ingredients
This pasta salad, is mixed with olive oil, lemon juice, herbs, cucumbers, feta cheese and much more! It’s the perfect summer time side dish for any cookout. I love dill and I love lemon juice – so obviously for me this gluten free pasta is the perfect combination!
Can I make this in advance?
It can be served warm or cold, and it keeps well in the refrigerator for 2-3 days!
Gluten Free Lemon Dill Pasta Salad
Equipment
- 1 large serving bowl
- 1 pot to boil pasta
Ingredients
- 1 box Jovial Farfalle Pasta [12 oz] or your favorite gluten free pasta
- 1/2 cup Olive oil I always use extra virgin Olive Oil
- 1/2 cup Freshly squeezed lemon juice [3 lemons]
- 1 cup Chopped fresh dill
- 1 cup Chopped fresh parsley
- 1 cup Peeled cucumber I don't use the seeds
- 1/2 cup Small diced red onion
- 3/4 pound Good feta cheese large diced
- Salt and fresh ground Black Pepper
Instructions
- Fill a large pot with water and bring water to a boil
- Add the bowtie pasta and let boil for 8 minutes, stirring occasionally [I think the box says 9 minutes cooking time – I only cook for 8]
- Drain pasta and pour into a large bowl
- In a separate bowl, whisk together 1/2 cup lemon juice, 1/2 cup olive oil, 2 teaspoons salt, 1 teaspoon pepper
- Pour over the hot pasta and stir well
- Now add the 1 cup chopped dill, 1 cup chopped parsley, 1 cup diced cucumber, and 1/2 cup of chopped onion
- Toss well
- Add the Feta and stir carefully
- Set aside and cover with cling wrap for 1 hour to allow the flavors to blend together
- You can also refrigerate overnight – I don't usually do this, with gluten free pasta I think it's best served fresh
- Enjoy!
