Gluten Free Lemon Dill Pasta Salad

This gluten free pasta salad is the perfect side dish for any meal or cookout. It's flavorful, colorful, and easy to make!

Equipment

  • 1 large serving bowl
  • 1 pot to boil pasta

Ingredients
  

  • 1 box Jovial Farfalle Pasta [12 oz] or your favorite gluten free pasta
  • 1/2 cup Olive oil I always use extra virgin Olive Oil
  • 1/2 cup Freshly squeezed lemon juice [3 lemons]
  • 1 cup Chopped fresh dill
  • 1 cup Chopped fresh parsley
  • 1 cup Peeled cucumber I don't use the seeds
  • 1/2 cup Small diced red onion
  • 3/4 pound Good feta cheese large diced
  • Salt and fresh ground Black Pepper

Instructions
 

  • Fill a large pot with water and bring water to a boil
  • Add the bowtie pasta and let boil for 8 minutes, stirring occasionally [I think the box says 9 minutes cooking time - I only cook for 8]
  • Drain pasta and pour into a large bowl
  • In a separate bowl, whisk together 1/2 cup lemon juice, 1/2 cup olive oil, 2 teaspoons salt, 1 teaspoon pepper
  • Pour over the hot pasta and stir well
  • Now add the 1 cup chopped dill, 1 cup chopped parsley, 1 cup diced cucumber, and 1/2 cup of chopped onion
  • Toss well
  • Add the Feta and stir carefully
  • Set aside and cover with cling wrap for 1 hour to allow the flavors to blend together
  • You can also refrigerate overnight - I don't usually do this, with gluten free pasta I think it's best served fresh
  • Enjoy!

Notes

I love this pasta salad because you can use alternative veggies. You can also add minced scallions, or tomatoes, or extra cucumber. It's really versatile!
