Gluten Free Mango Salsa
This colorful gluten free mango salsa is sweet, spicy, delicious, and super easy to make! You can serve it with chips, tacos, seafood, and so much more!

- 3 Mangos Peeled, Pitted, and Diced
- 1 1/4 Cup Red Bell Pepper About 1 large red pepper, seeded and chopped
- 1 cup Red Onion [about half an onion]
- 1/3 cup Jalapeno about 1 Jalapeño - Seeded and Minced
- 1 cup Cilantro about 1 bunch, chopped - but totally up to you how much more or less you want to add
- 1 Lime Juiced
- 1/8 to 1/4 tsp salt to taste
- Agave Syrup lightly drizzled on top for added sweetness
In a large mixing bowl, combine the mangos, red pepper, red onion, jalapeño, cilantro, and mix together
Squeeze the juice of a lime on top of the salsa
Start to add your 1/8 - 1/4 tsp of salt, I start with an 1/8 of tsp and taste it first - I don't like too much salt
Lightly drizzle agave syrup on top of mango salsa and mix together
Now you can either refrigerate and let the flavors marinate together or serve right away! Totally up to you!

This recipe yields about 8 cups of gluten free mango salsa, you can cut it in half or double it depending on if you need more or less.
To cut the mango - I peel it first, and then hold upright and slice each side just past the seed, about 1/4 inch from the center, and then dice it into bite size pieces
For the jalapeño, the more seeds you add, the spicier the salsa will be!
Sometimes, I go back and add a little extra cilantro once I've added the salt, lime, and agave syrup - but it's totally optional. I like a lot of cilantro in my mango salsa
*if you have an aversion to cilantro, you can sub it for parsley*
store in the refrigerator in an airtight container for about 5 days
