Gluten Free Potato Salad

This gluten free potato salad is easy to make, the perfect cookout side dish, and always a crowd pleaser!

Ingredients
  

  • 4 Large Russet Potatoes
  • 3 Eggs
  • 1 Cup GF Mayonnaise
  • 1/2 Cup Chopped White Onion
  • 1/8 Cup Gluten Free Italian Dressing
  • Sprinkle of Paprika

Instructions
 

  • Boil 4 large potatoes in a large pot of water for 40 minutes
  • After 30 minutes, add 3 eggs in with the potatoes for the remaining 10 minutes so the eggs become hard boiled
  • Grab a large bowl
  • Peel the hardboiled eggs
  • In the large bowl smash up the eggs with a fork
  • Add the onion in with the eggs
    1/2 Cup Chopped White Onion
  • Add in the Mayo and mix it all together
    1 Cup GF Mayonnaise
  • Run the potatoes under cool water, and start peeling the potatoes
  • Once they're peeled - chop the potatoes into bite size pieces and add that into the bowl
  • Pour the Italian dressing on top
    1/8 Cup Gluten Free Italian Dressing
  • Mix it all together
  • Sprinkle GF Paprika across the top of the potato salad
  • Serve and Enjoy!

Notes

I prefer to eat and serve this potato salad when it's warm. 
It can be stored in an airtight container for up to 5 days in the refrigerator!
