Gluten Free Potato Salad
This gluten free potato salad is easy to make, the perfect cookout side dish, and always a crowd pleaser!

- 4 Large Russet Potatoes
- 3 Eggs
- 1 Cup GF Mayonnaise
- 1/2 Cup Chopped White Onion
- 1/8 Cup Gluten Free Italian Dressing
- Sprinkle of Paprika
Boil 4 large potatoes in a large pot of water for 40 minutes
After 30 minutes, add 3 eggs in with the potatoes for the remaining 10 minutes so the eggs become hard boiled
Grab a large bowl
Peel the hardboiled eggs
In the large bowl smash up the eggs with a fork
Add the onion in with the eggs
1/2 Cup Chopped White Onion
Add in the Mayo and mix it all together
1 Cup GF Mayonnaise
Run the potatoes under cool water, and start peeling the potatoes
Once they're peeled - chop the potatoes into bite size pieces and add that into the bowl
Pour the Italian dressing on top
1/8 Cup Gluten Free Italian Dressing
Mix it all together
Sprinkle GF Paprika across the top of the potato salad
Serve and Enjoy!
I prefer to eat and serve this potato salad when it's warm.
It can be stored in an airtight container for up to 5 days in the refrigerator!
